Post fermentation we aged Riddler for three months on fruit selected to complement the character of the base beer– plums for tanginess, cherries for tartness, and roasted figs (kindly provided by local beer aficionado, Tim Lloyd) for a touch of figgy sweetness. | | Dolphin | Silhouette | 6.3 | Silhouette uses beer aged for 20 months – 16 months in tank, and then 4 months on plump juicy blackcurrants, a mixture of second-use raspberries with pinot noir skins, and a blend of mulling spices (cinnamon sticks, star anise and ginger).
